There are two sets of spices to be mixed.

First set to be used once meat has been cooked:

  • 3 tablespoons chili powder
  • 1 tablespoon red pepper flakes
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 2 teaspoons oregano (Mexican or regular)
  • 1 tablespoon salt
  • 1/4 to 1/2 chopped fresh cilantro leaves

Second set to be used to cook the meat:

  • 2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper (you can put more or less depending on taste)
  • 2 tablespoons oregano
  • 1 tablespoon thyme
  • 1 tablespoon dill

Now the rest of the ingredients:

  • 1-2 pounds of deer meat cut into 1/2 inch cubes (You can use beef if you want)
  • 2 cups chopped onions (white, yellow or red according to preference)
  • 2 tablespoons minced garlic
  • 2 large jalapeños (you can substitute Serrano according to preference)
  • 1 15 ounce can of crushed, or diced tomatoes and their juices
  • 1 12 ounce bottle of beer
  • 2 or more boxes of beef stock (use according to how much chili you want to make. I normally make about 4-5 quarts.)
  • 2 tablespoons of masa, you can substitute corn starch (for thickening)
  • 1 large can of pinto beans
  • 1 large can of black beans

Extras to be added according to your preference:

  • any kind of graded cheese
  • cornbread, corn muffins, garlic bread optional

Cooking Directions:

Put the meat into a large frying pan along with the second set of spices above. Cook on medium to high heat. Cook meat until it is thoroughly cooked and slightly browned. Once the meat is cooked put it into a large cooking pot. Add the onions, garlic and Jalapeños. Bring to a medium heat and cook, stirring often until the onions start to get clear. Add in the beer, crushed tomatoes, beef stock. Bring to a boil and let boil for 10-15 minutes. Reduce heat to a simmer (a few bubbles now and then). Simmer for 3-4 hours. About 30 minutes before it’s done, add the Masa and stir it in well. Then drain the juices from the cans of beans, and then add them.
